Cacouyard is a soft cheese made in a small artisanal cheese dairy in Haut Doubs. It is a cheese made from Montbéliarde mountain cow milk fed only with grass and fodder (no silage).

Cacouyard is a round, stabilized soft cheese with a washed rind and raw milk. Its aging is 3 weeks on a spruce board and it is rubbed every two days in salt water without dyes.

Its particularity comes from the fact that a nut flavor is added to the milk during production, which gives it a much appreciated character and originality.

It is a soft and unctuous cheese that suits the palates of lovers of traditional and artisanal cheeses. It can be cooked on toast, in puff pastry or in a gratin with potatoes.
